Tasting Notes: assertive yet fresh, with a first flavor of fennel, followed by classic wormwood
Absinthe is Swiss in origin but more often associated with Paris, since it was the drink of choice for poets, artists and bohemians at the turn of the last century. A favorite of Baudelaire, Rimbaud, Picasso, Hemingway, and Poe, this flavorful spirit was unjustly banned around the world for many decades – the victim of a few unscrupulous distillers, and a campaign by the French wine industry, who were threatened by its popularity.
Now that it is legal again in the United States, we are delighted to present INFÂME, our absinthe blanche. This fragrant spirit mixes well in cocktails like the Sazarac and Corpse Reviver, it can also be enjoyed in a traditional louching ceremony, by slowly dripping ice-cold water over a sugar cube, to melt it into the absinthe.
Our recipe is based on one of the original Swiss absinthe formulations using anise, fennel, wormwood, and angelica root. These botanicals are artfully distilled in our custom-built Bain-Marie Still to fully extract the essential oils as well as those precious louching oils.

We are serving cocktails at our indoor and outdoor cocktail bars overlooking the Chattanooga Choo Choo engine and our spacious covered patio. You take your cocktails with you as wander around the Choo Choo gardens since the entire area is Open Container.
