Once you have unraveled the mystery of producing an authentic agave spirit, the next logical step is to put some in a barrel and let the magic of the wood begin. We launched this new spirit on The Day of the Dead 2022!
Starting with the same amazing agave spirit we produce for Once Agave Blanco, we barrel-aged it in once-used whiskey barrels to create our own version of a reposado tequila. It mixes well in cocktails but can be savored by itself neat or over ice. A Gate 11 Distillery exclusive - Once Oro is an unexpected delight!

Despite its immense popularity in the US, tequila is perhaps the most mysterious of the major spirit types. When you look beyond the large tequila houses and the hyperbolic fog of the celebrity agave brands, you find a world of small, artisanal tequila producers, steeped in arcane practice with methods than remain for the most part inscrutable to outsiders.
This veil of mystery is a major reason that few craft distillers in the US have attempted to produce their own agave spirits. Those that decide to try are immediately confronted with the difficulties of sourcing authentic raw materials and developing effective fermentation and distillation procedures for this most challenging spirit.
The Gate team spent the better part of a year tackling these challenges launching Once Agave Blanco on Cinco de Mayo 2022. Starting with 100% Blue Weber agave nectar imported from Jalisco, Mexico, we craftily ferment this precious syrup and then distill it in our unique pot still to create an amazing agave spirit. We like to say it’s a “tequila” in every sense except its place of origin.
